Ingredients:

For the Filling:

  • Rice vermicelli noodles
  • Cooked and shredded chicken, shrimp, or tofu (optional)
  • Fresh herbs (such as mint, basil, and cilantro)
  • Bean sprouts
  • Sliced cucumber
  • Sliced red bell pepper
  • Sliced jalapeño or chili pepper (adjust to your spice preference)
  • Sliced green onions

For the Sauce:

  • 14 cup soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or sugar
  • 1-2 cloves garlic, minced
  • 1-2 teaspoons sriracha sauce or chili paste (adjust to your spice preference)

For the Rice Paper Wrappers:

  • Round rice paper wrappers (spring roll wrappers)
  • Warm water (for soaking the wrappers)

Instructions:

1. Prepare the Noodles:

  • Cook the rice vermicelli noodles according to the package instructions. Drain and rinse them under cold water to stop the cooking process. Set aside.

2. Make the Sauce:
